Resumo: Gastronomic tourism has been assuming an increasingly important role in territories which aim to become tourist destinations. It covers a wide range of experiences, such as gastronomic routes, which have emerged worldwide, and Portugal is no exception. Gastronomic routes mitigate seasonality, diversify the tourist offer, attract visitors to less developed territories in terms of tourism, and improve the populations' quality of life. Given the vital role that gastronomic routes play in the sustainability of territories, it is essential to understand how they are being created, developed, and explored. Since there is no single centralized source of information on Portuguese routes, this study identifies 15 gastronomic routes in Portugal. The routes were analyzed according to six criteria. It was concluded that routes spread throughout the national territory, which occur throughout the year, encompassing different regional products and diversified members. However, they are still a small number, and they do not always take advantage of all the territory's characteristics.
