Resumo: The western slope of the Serra da Estrela, due to its characteristics, favoured the settlement of settlements, whose geomorphological characteristics were systematically taken advantage of, in the creation of a network of mid hill fort settlements. The diversity of fauna and flora characteristic of this area of medium altitude, constituted a varied source of raw materials, to which transformation and storage techniques were employed, allowing the elaboration of a recipe based on products of natural origin and accessible to the people, thus constituting their diet. Marked by singular characteristics, it represents an enormous touristic potential in the historical heritage, archaeological, natural and touristic aspects. The potential resulting from the symbiosis between the cultural and natural heritage of this territory should be highlighted, conferring a potential and invaluable resource, capable of promoting the dissemination of traditions, enabling the development of communication strategies/discourses with very diversified audiences, making it possible to project the region. This research work focused on the analysis of the geographical distribution of these settlements, social structure, their way of life, eating habits and the exploitation of endogenous resources. This work also aimed to establish a parallel between the way endogenous resources were exploited by ancestral populations and the trends seen over time, with changes in lifestyle, eating habits underlying technological development, change / evolution of production techniques and globalization. A chronological analysis was carried out with the contribution of toponymy, cartographic analysis, monographs for the knowledge of the existing heritage reality along the target territory of the study.
