Resumo: This paper presents a discussion of the change the way of life in the rural environment from the point of view of tourism conceived as an open and dynamic system, emphasizing innovation processes, planning and valuation of country life. To this end, the objective is to raise the case of the project agritourism ‘Accepted in Cologne’ in the municipality of Santa Rosa de Lima in Santa Catarina - Brazil, which stands out in the initiative to promote rural environment in the upgrading of rural activities through perspective of community-based tourism. To facilitate the research and development work characterized the study as exploratory and descriptive, paying attention to a qualitative perspective. Therefore, we used as instruments of data collection bibliographical, documentary research and case study, which took advantage of the technical procedures for waiver through surveys of semi-structured interviews and unsystematic observation. After analysis, it was concluded that the environment of agritourism in Santa Rosa de Lima region and allows the development of commercial tourism activities in the rural environment, but without fostering the usual implications of intensive usage and social exclusion.
