Resumo: This paper undertakes a review of the literature relating to the subject of quality in tourism education. It outlines the reasons for the delay in carrying out research projects related to tourism education, above all in Europe. After reviewing those aspects which relate to the skills required by professionals in the tourist sector it goes on to analyse the implementation of Total Quality Management in tourism education and the role of teaching in ensuring quality. The preparation of new staff who are involved in tourism education has been seriously questioned.
