Resumo: In this paper a research about restaurants geographically located in the city of Valencia (Spain) is carried out in order to get a more specific overview of the current status of these businesses from the point of view of owners or managers. By developing semi-structured interviews and using the methodology of grounded theory results have been obtained, among others, about the situation of the sector and competency, the quality of customer service, the training of workers, the employment situation of women in these businesses and the use of new technologies.
